The filling sounds gorgeous, but I need a translation about the pie
crust. At first I thought it was a pastry shell, but on re-reading think it must be one of thos wizzed up biscuits and butter ones. I know Oreos are chocolate flavoured biscuits, but have never met Grahams Crackers. Here cream crackers are a very dry biscuit for cheese - ooops, have just realised that your biscuits are called crackers, and your biscuits are a sort of scone, so now I'm even more confused! It can't be a 'for cheese' variety..... We can get choc chips but they work out much much more expensive than
'proper' chocolate. Oh my! This is going to be difficult. A graham cracker is a cross
between a cookie and a cracker. It is slightly sweet but is made with graham flour and so has a grainy texture and taste. It makes an excellent pie shell for most cream type pies. So, yes a graham cracker crust is a wizzed up biscuit and butter one but is not so sweet as a sugar biscuit crust would be. In the case of this pie, I just can't get my head around the combination of the intense chocolate and the graham crackers. I am going to try it with "wizzed up" walnuts and butter. Rita L. We don't have them either. But basically any "plain" sweet biscuit (biscuit as the British Commonwealth would know it - LOL) will do. I often use a crumb base for my unbaked cheesecakes and pies but I usually make it up on the day. Biscuits and butter is the basic mix. But I normally cut down on the butter and add some copha to get a nice hard set shell. This is easier to cut in slices without crumbling, and it holds firm outside the fridge better. It also cuts down on the rich buttery taste. I add nuts, cinnamon, nutmeg, icing sugar and/or coconut - depending on the filling. And for my fabulous creme de menthe pie I add cocoa and coconut for a beautiful dark choc base with the lovely light green creamy filling. Shredded brazil nuts with a couple tablespoons of sugar form easily, and if you bake it for a few minutes it will hold shape sufficiently to serve fairly well. Brazil nuts are oily enough that you don't have to add any extra fat to make it work. This is similar to the dessert I make my DH for his birthday every year::
12 oz. bag chocolate chips 1 cup sugar 1/4 cup water 4 beaten egg yolks Combine in a double boiler and cook for 2 minutes--cool: Add: 4 beaten egg whites 1 pt. cream-whipped Break an angel food cake into pieces Layer cake and chocolate mixture. Refrigerate. I don't layer-just mix it all together.
