Default OT - Chocolate Slice Recipe

I've just emailed this off to the school I trained at last week where they
went nuts for this. It's similar to brownies in texture but not as
fiddlyfied to make. Here it is for your eating pleasure......

1/2 cup olive oil
ICING
1 cup brown sugar 1
cup icing sugar
1/4 cup cocoa powder 2
tablespoons coco powder
1 egg, lightly beaten
2 tablespoons boiling water
1 teaspoon vanilla essence
1 cup self-raising flour
1/2 cup desiccated coconut

1. Preheat oven to 180C. Line a 3cm deep 26 x 16cm lamington pan.
2. Place oil, sugar, and cocoa into a medium sized pan over low heat. Cook
for 3 minutes or until cocoa is dissolved and mixture is warm. Allow to
cool.
3. Add egg and vanilla to oil mixture and mix well. Add flour and coconut.
Mix until well combined and then spread mixture over base of prepared pan.
4. Bake for 18-20 minutes or until a skewer inserted into the centre comes
out clean.
5. Make icing. Combine icing sugar and cocoa in a bowl. Add water and stir
until smooth. Spread over warm slice and allow to cool completely in the
pan. Cut into squares to serve.

Why olive oil? (Thinking the extra virgins might be wasted with all that
chocolate :-)

Question??? what is a lamington pan??? Is 180c like 350 degrees? Is 3cm deep
26 x 16cm like a rectangle cake pan?

Temperature Conversions:

You might want to jot these formulae in your favorite recipe book.
Celsius to Fahrenheit:
°F = (1.8 x C°) + 32
Fahrenheit to Celsius:
°C = (°F - 32) divided by 1.8

So:
°F = (1.8 x 180°) + 32
( 324°) + 32
°F = 356°

You've never heard of the good old Aussie Lamington? It's a spongey cakey
cake covered in chocolate icing and rolled in desiccated coconut - yummy!
But yes it is just a long rectangular cake pan - shallowish. If you need to
you can make it in a square cake pan. Unsure of the temp conversions
believe it is what is classed as "moderate"?

I don't quite understand which bits are for the icing and which
for the "brownies".. is the "tablespoons cocoa powder" for the
chocolate icing,... and if so, does that come out of the 1/4 cocoa
powder mentioned above, or is it just an estimate you do at the time
of the icing making?
Sorry, only had 3.5 hours sleep last night, plus one more hour on
the bus...

Sorry my fault. I had it tabbed in 2 columns and obviously OE doesn't like
that - here it is "normally"


1/2 cup olive oil

Icing is 1 cup icing sugar, 2 tablespoons cocoa powder, 2 tablespoons
